
I like these beautiful, flavoursome lamb cutlets marinated in olive oil and recent lemon with a touch of chilli and I do know you’ll too!

2 massive garlic cloves, crushed
1 tablespoon recent or dried rosemary leaves
Pinch of dried chilli flakes
Pinch of sea salt
2 tablespoons recent lemon
3 tablespoons extra-virgin olive oil
6 lamb chops, thick 3/4 inch
Technique:
In a pestle and mortar (or meals processor with blade) add the garlic, rosemary, chilli flakes, salt and lemon juice. Beat or pulse till blended. Pour within the olive oil and blend to create a thicker consistency.
Brush the marinade on each side of the lamb chops and allow them to relaxation in it for an hour minimal within the fridge (you may as well depart in a single day if you want).
