
Coconut Fish Curry.
I needed to share my husband Peter’s take (and photos) on BBC Meals’s model of Green Coconut Fish Curry he likes to serve up for fish-eating mates. This additionally works simply as nicely with tofu. Coconut in curry makes for a creamy and aromatic base for a fish curry. The flavours complement each other completely.
Components:
- 450g/1lb skinless cod fillet, minimize into giant chunks
- 12 prawns
- 1 tbsp olive oil
- 1 tsp cumin seeds
- 1 white onion, finely chopped
- 3 gloves garlic, peeled and chopped
- 3 inexperienced chillies, finely chopped
- ½ tsp floor turmeric
- ½ tsp pink chilli powder
- pinch garam masala
- 300ml/10½fl oz carton coconut cream
- handful of recent coriander, chopped
- brown basmati rice
- salt and pepper.
Methodology:

Warmth the oil in a big pan. Add the cumin seeds and when scorching, add within the onion evenly golden. Add the garlic and fry. Decrease the warmth and add the inexperienced chilli, floor turmeric and chilli powder.

Add the garam masala coconut cream and warmth for 3 minutes. Add the cod and cook dinner for 12 minutes. Add the prawns and cook dinner for 3-4 minutes.

Boil the rice as per the directions and serve. Garnish with coriander. Season with salt and pepper.
