That is the creamiest sans cream vegan sauce you’ll ever eat. Filling, scrumptious and completely plant-based, the entire household liked this dish of rigatoni with roasted butternut squash and swede sauce. Wealthy, velvety, seasonal (probably the most autumnal dish I believe I’ve ever seen), I may actually eat this day-after-day.

Substances:
Serves 4
- 4 chopped onions
- 1 head garlic, peeled and chopped
- olive oil
- 300 g butternut squash, peeled and reduce into small cubes
- 300g swede, peeled and reduce into small cubes
- Further Virgin Olive Oil
- 2 cups vegan broth
- 1 packet of rigatoni
- freshly floor pepper
- sea salt
- dried coriander
Technique:
Pan fry the onions and garlic in olive oil. Take away from the warmth and set to at least one facet. Place the squash and swede into a big oven proof tray/dish and drizzle with olive oil. Bake at 190C for 25 minutes and till the veg is tender.
Boil your pasta following the packet directions.
Add the butternut, swede, onions and garlic and vegan broth right into a blender or hand-blend. Mix the veg making a sauce. Season. Style and season some extra if obligatory. Add some chilli flakes if you’d like a kick to it.
Verify the pasta is al dente. Drain.
Place into a big bowl. Pour over the sauce, combine and plate up.
Garnish with dried coriander.
Easy but so scrumptious.
